Coho Salmon with Lemon and Dill

Ingredients:
  • 2 coho salmon fillets
  • 1 lemon (sliced)
  • Fresh dill (chopped)
  • Salt and pepper to taste
Instructions:
  1. Preheat the oven to 375°F (190°C).
  2. Place the salmon fillets on a baking sheet
  3. lined with parchment paper.
  4. Season with salt and pepper.
  5. Lay lemon slices on top of each fillet.
  6. Sprinkle chopped dill over the salmon.
  7. Bake for 15-20 minutes or until the fish flakes easily.

Grilled Coho Salmon Tacos

Ingredients:
  • 2 coho salmon fillets
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • Corn tortillas
  • Sliced avocado, shredded cabbage, and salsa (for toppings)
Instructions:
  1. Rub the salmon fillets with olive oil and sprinkle with chili powder.
  2. Grill the fillets over medium-high heat for 4-5 minutes per side.
  3. Flake the salmon and assemble tacos with avocado, cabbage, and salsa.

Pan-Fried Yellow Perch

Ingredients:
  • 1 lb yellow perch fillets
  • ½ cup all-purpose flour
  • Salt and pepper to taste
  • Vegetable oil for frying
Instructions:
  1. Dredge the perch fillets in flour seasoned with salt and pepper.
  2. Heat vegetable oil in a skillet over medium heat.
  3. Fry the fillets for 2-3 minutes per side or until golden brown.
  4. Serve with lemon wedges and tartar sauce.

Beer-Battered Yellow Perch

Ingredients:
  • 1 lb yellow perch fillets
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup cold beer
  • Salt and pepper to taste
Instructions:
  1. In a bowl, mix flour, baking powder, salt, and pepper.
  2. Gradually whisk in cold beer to create a thick batter.
  3. Dip perch fillets in the batter.
  4. Fry in hot oil until crispy and golden brown.

Baked Lake Whitefish with Cumin

Ingredients:
  • 2 lake whitefish fillets
  • Ground cumin
  • Salt and pepper to taste
Instructions:
  1. Preheat the oven to 375°F.
  2. Place the fillets on a baking sheet lined with aluminum foil.
  3. Lightly sprinkle the fillets with ground cumin.
  4. Bake for 12 minutes or until the fillets easily flake.
  5. Serve with your favorite sides.

Lake Michigan Broiled Whitefish

Ingredients:
  • 2 lake whitefish fillets
  • Butter
  • Chef Frank’s Seasoning (or your favorite seasoning blend)
  • Lemon zest
Instructions:
  1. Preheat the broiler.
  2. Place the whitefish fillets in a pan.
  3. Add a little water (do not spray the pan to prevent skin from coming off).
  4. Brush with melted butter and sprinkle with Chef Frank’s Seasoning.
  5. Squeeze lemon juice over the fillets.
  6. Broil for about 5 minutes or until the fish flakes easily.
  7. Serve with drawn butter or tartar sauce.
