Coho Salmon with Lemon and Dill
Ingredients:
- 2 coho salmon fillets
- 1 lemon (sliced)
- Fresh dill (chopped)
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- Place the salmon fillets on a baking sheet
- lined with parchment paper.
- Season with salt and pepper.
- Lay lemon slices on top of each fillet.
- Sprinkle chopped dill over the salmon.
- Bake for 15-20 minutes or until the fish flakes easily.
Grilled Coho Salmon Tacos
Ingredients:
- 2 coho salmon fillets
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- Corn tortillas
- Sliced avocado, shredded cabbage, and salsa (for toppings)
Instructions:
- Rub the salmon fillets with olive oil and sprinkle with chili powder.
- Grill the fillets over medium-high heat for 4-5 minutes per side.
- Flake the salmon and assemble tacos with avocado, cabbage, and salsa.
Pan-Fried Yellow Perch
Ingredients:
- 1 lb yellow perch fillets
- ½ cup all-purpose flour
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
- Dredge the perch fillets in flour seasoned with salt and pepper.
- Heat vegetable oil in a skillet over medium heat.
- Fry the fillets for 2-3 minutes per side or until golden brown.
- Serve with lemon wedges and tartar sauce.
Beer-Battered Yellow Perch
Ingredients:
- 1 lb yellow perch fillets
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 cup cold beer
- Salt and pepper to taste
Instructions:
- In a bowl, mix flour, baking powder, salt, and pepper.
- Gradually whisk in cold beer to create a thick batter.
- Dip perch fillets in the batter.
- Fry in hot oil until crispy and golden brown.
Baked Lake Whitefish with Cumin
Ingredients:
- 2 lake whitefish fillets
- Ground cumin
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F.
- Place the fillets on a baking sheet lined with aluminum foil.
- Lightly sprinkle the fillets with ground cumin.
- Bake for 12 minutes or until the fillets easily flake.
- Serve with your favorite sides.
Lake Michigan Broiled Whitefish
Ingredients:
- 2 lake whitefish fillets
- Butter
- Chef Frank’s Seasoning (or your favorite seasoning blend)
- Lemon zest
Instructions:
- Preheat the broiler.
- Place the whitefish fillets in a pan.
- Add a little water (do not spray the pan to prevent skin from coming off).
- Brush with melted butter and sprinkle with Chef Frank’s Seasoning.
- Squeeze lemon juice over the fillets.
- Broil for about 5 minutes or until the fish flakes easily.
- Serve with drawn butter or tartar sauce.
